ingredients for 4

suggest cooking with two pans – saucepan and frying pan

veg:
400g / 16oz butternut squash, peeled and diced into one-inch cubes
1x aubergine diced into one-inch cubes
1x red pepper diced
later
3-400g tomatoes sliced or 400g tin of chopped toms
400g tin of chickpeas drained
250ml veg stock

veg cooking spices:
teaspoon of ground coriander
teaspoon of ground tumeric or another curry
teaspoon of harissa (receipe recommends 1 tablespoon but then it’s v spicy)

finishing off veg and spices:
30g dried apricots or figs, roughly chopped
zest and juice of a lemon, eg. grated and squeezed into the garlic pestle
a few cms grated ginger if fresh or half teaspoon of ground ginger

for topping:
1 pomegranate, seeds knocked out and cleaned
pack of freshly chopped coriander (30g)

preparation

mix the veg cooking spices in the saucepan

heat 1 tbs oil for in the frying pan and get this hot – before adding:
1 chopped medium onion
2 chopped cloves of garlic
cook for 2 mins until translucent

then remove the onions and garlic into the saucepan of spices

return the frying pan to the heat with 2tbs oil then add in sequence:
butter nut squash – cooking for 3-5 minutes
aubergine – cooking for 2 minutes
peppers – cooking for 2 minutes
if need extra liquid, add some of the veg stock
should look like they are starting to cook

now add the contents of the frying pan into the saucepan and mix around for a minute

then add the tomatoes and stock so that it covers the veg

bring the saucepan to a simmer and allow to cook for about 10 minutes, test that butternut squash pieces are starting to go soft and tender

only stir gently and occasionally

finally add the drained chickpeas then the dried apricots/figs and cook for further few minutes and stir in the lemon and ginger

serve in a bowl and top with coriander and pomegranate seeds, with a bread basket
