ingredients
1 medium (red) potato
100g goats (or feta) cheese (or black olives)
4-5 spring onions finely sliced
150g self-raising flour
1 level teaspoon salt
pinch cayenne pepper
1 rounded teaspoon chopped thyme leaves
large egg
2 tablespoons milk
1 rounded teaspoon grain mustard

get ready with:
flour for dusting

baking sheet

oven at 190 deg C

preparation

peel potato and grate on a box grater on the coarsest side straight into a mixing bowl

sift in the floor, salt and cayenne pepper, holding sieve up to give flour a good airing

next add the spring onions, thyme and two-thirds of the cheese

take a palette knife and blend everything together thoroughly

separately beat the egg gently with the milk and mustard

then pour this mixture into the mixing bowl and still using the palette knife, bring it all together into a loose, rough dough

transfer it to the baking sheet and pat it gently into a 6 inch round “loaf” shape

now press the rest of the cheese over the surface then dust with a little flour and bake the bread on the middle shelf for 40-45 minutes until golden brown

remove to a cooling tray and serve still slightly warm from the oven if possible (is also nice cold later)
